Being a forced-air, pull-through system, AutoDraft
temperature control brings a
number of additional benefits:
Safety
- The system is inherently fail-safe. Loss of
electrical power immediately stops heat transfer because components are
arranged to prevent a natural draft from occurring.
- Physical separation of the IFF and
cooking chamber ensures grease and fire never meet.
- The IFF has no attached energy sources (e.g., electric
components, natural gas lines).
Efficiency
- A recirculating convection fan can be added to the cooking
chamber without the concern of disturbing a delicate natural-draft
system. This improves heat transfer to shorten cooking times by
25% or more and significantly improves temperature uniformity.
- With a hot, powerful fire always on standby in the IFF,
temperatures recover within a few minutes after loading and/or
unloading the cooking chamber.
- When the cooking chamber is opened, the AutoDraft suction
path is broken. This automatically stops the flow of smoke from
the IFF into the cooking chamber and evacuates the cooking chamber by
drawing fresh air through the open door.
Installation flexibility - for commercial installations,
system components can be remotely located and connected by
high-temperature duct. For example, the IFF can be located in an
outdoor fireproof enclosure and the cooking chamber installed in a
convenient kitchen location. "Remoting" the IFF:
- Can be a major layout advantage over restrictive,
through-wall installation requirements.
- Facilitates better food-safety protocol by keeping wood
out of the kitchen and keeping meat out of the woodshed/firebox area.
- Reduces the pit's footprint on valuable kitchen real
estate.
- Dramatically reduces the pit's heat load on the kitchen.
